Eating Reall Recipes: Egg Muffins

Eating Real Recipes - Egg MuffinsEat real and eat healthy at breakfast time…

 

I like to make a batch of these on Sunday and put them in the fridge for an easy, on the go meal.  Just warm them up and head out!

Ingredients

  • 12 large eggs
  • 1 large onion
  • 1 large tomato
  • Optional – add bacon, sausage crumbles, chopped spinach, cheese – you name it!

 

Directions

Beat together eggs, onion, tomato, and any optional add ins.  Pour mixture into a muffin pan filling each cup 2/3 full.  Bake for 30 minutes.

 

Special diet tips / options:

  • Gluten free:  As is!
  • Vegan diet:  Comments welcome on this one!  Perhaps a good tofu scramble recipe?
  • Vegetarian diet:  As is – as long as eggs are allowable!
  • Paleo diet:  As is!
  • Locavore:  Use local foods – fresh farm eggs and veggies from your garden.
